½ tbsp of vanilla extract

Ingredients
2 large zucchinis
1 ½ cup of part-skim ricotta cheese
1 egg
1 cup of frozen spinach. Your spinach should be thawed and patted dried. Patting the spinach will help to retain its nutrients, form, and its flavor.

This dish is filling and very healthy. It will keep you satisfied, and you can enjoy it for special occasions. The only drawback about this dish is that it does take about an hour to prepare.
